A sixteen dollar enamel mug and a jacket that comes in five sizes and two colors aren't the same kind of product. A simple item needs almost nothing: a name, a number, a category, what it cost you and what you sell it for. A product with sizes and colors gets variations, and each variation is real stock: its own item number, its own barcode and its own quantity in every store. The attributes those variations are built from are defined once and reused, so Size means the same thing everywhere in your catalog.

Categories nest, so Apparel can contain Outerwear, and tags cut across them for the things a category can't express. Pricing goes further than one number. Cost and retail can differ per store, and pricing tiers let a trail club member, a guide buying at pro rates and a wholesale account each see their own price automatically. Bundle products together as a kit and it rings up as one line while the components come out of stock individually. And price check answers the question a customer just asked you, in one screen.
