At the register, Store Account is simply another payment type. Ring the sale up as normal and charge it to them instead of taking money. The balance moves immediately, and the outstanding report tells you who owes what, right now, across every store.
Every charge and every payment is a line in their ledger, so a statement is something you send rather than something you assemble. Payments come back in through the register as a store account payment: their open invoices are listed, you pick the one they are settling, take the money, and the balance closes out. Those charges can be invoiced on your own terms, and every invoice carries its due date, its balance and the sale it came from, aged into the buckets along the top.
And the same mechanism runs in the other direction for suppliers, so what you owe them is tracked the same way as what your customers owe you.
